Zucchini chips with hummus

The crunchy snack for when you're craving something fried.

Rico's note: Make these for game night instead of opening a bag of potato chips — they satisfy the craving nicely.

Ingredients

  • 2 medium zucchini, thinly sliced into rounds (400 g / 14 oz)
  • 5 tbsp oat flour (50 g / 1¾ oz)
  • 1 beaten egg (50 g / 1¾ oz)
  • 1 tsp paprika (2 g)
  • 1 tsp dried oregano (1 g)
  • 100 g (3½ oz) hummus — jarred or homemade
  • salt and pepper, to taste

Method

  1. Slice the zucchini into thin rounds, about 0.5 cm (¼ in) thick.
  2. On a plate, mix the oat flour with the paprika, oregano, salt and pepper.
