Yogurt raspberry mochi

Rice paper filled with a chilled protein yogurt and raspberry cream.

Rico's note: Make this when you want something sweet and cool without turning on the oven or dirtying any pots.

Ingredients

  • 3 rice leaves (24 g / ¾ oz)
  • 130 g (4½ oz) low-fat Greek yogurt
  • 15 g (½ oz) protein powder — or honey to taste
  • 45 g (1½ oz) raspberries — or another fruit

Method

  1. In a bowl, mix the yogurt with the protein powder (or honey) and the raspberries.
  2. Dip a rice paper sheet in warm water until pliable and lay it in a bowl.
