Quantities and times are a starting point: adjust them to your taste. Two things don't change: poultry and ground meat must be cooked all the way through, and allergens — always check the labels.

Vegan white chocolate ganache

Sweet, velvety and dairy-free — ready to chill or use warm.

Rico's note: Melt this slowly in a double boiler while you get on with something else — just don't forget to stir.

Ingredients

  • ½ cup cocoa butter, chopped (100 g / 3½ oz)
  • ½ cup coconut milk powder (60 g / 2 oz)
  • 2 tbsp powdered sugar (24 g / ¾ oz) — no added sugar: ¼ cup powdered erythritol (30 g)
  • 1 tsp vanilla extract (4 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Melt the cocoa butter in a double boiler, without letting it go above 45 °C (113 °F).
  2. Off the heat, sift the coconut milk powder and powdered sugar over the melted cocoa butter.
