Vegan royal icing with aquafaba

The classic royal icing texture, with no egg white — made with chickpea water.

Rico's note: Save the liquid from cooked chickpeas just for this icing — nothing goes to waste.

Ingredients

  • 3 tbsp aquafaba, chickpea cooking liquid (45 g / 1½ oz)
  • ⅔ cup powdered sugar (80 g / 2¾ oz) — no added sugar: 1 cup powdered (confectioners') erythritol (120 g)
  • ½ tsp lemon juice, or cream of tartar (2.5 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. With a mixer, beat the aquafaba with the lemon juice until foamy and it forms soft peaks, like whipped egg whites.
  2. On low speed, add the powdered sugar one spoonful at a time.
