Tuna and sweet potato croquettes

A protein-packed snack, crispy outside and creamy inside.

Rico's note: Make these with the canned tuna you always have in the pantry — they're quick and work for the next day's packed lunch.

Ingredients

  • 200 g (7 oz) canned tuna, drained
  • 300 g (10½ oz) sweet potato, cooked and mashed
  • 1 small egg (45 g / 1½ oz)
  • 30 g (1 oz) breadcrumbs (or gluten-free oat flour)
  • 1 small onion, finely chopped (70 g / 2½ oz)
  • 15 g (½ oz) chopped fresh parsley
  • ½ tsp sweet paprika (1 g)
  • salt and black pepper, to taste
  • olive oil spray, as needed

Method

  1. In a large bowl, combine the mashed sweet potato, drained tuna, egg, onion, parsley, sweet paprika, salt and pepper.
  2. Mix well into an even mixture.
