Sweet potato pizza toast

A sweet potato base with cottage cheese and melted cheese, no dough.

Rico's note: Have this as a snack before an afternoon workout — sweet potato that won't sit heavy.

Ingredients

  • 2 slices sweet potato, 1 cm (½ in) thick (180 g / 6½ oz)
  • 4 tbsp tomato puree (60 g / 2 oz)
  • 200 g (7 oz) cottage cheese
  • a drizzle of honey or sugar-free maple-flavored syrup (7 g)
  • oregano, to taste
  • 40 g (1½ oz) shredded reduced-fat cheese

Method

  1. Cut the sweet potato lengthwise into slices about 1 cm (½ in) thick.
  2. Cook in the air fryer at 180 °C (350 °F) for 7 minutes, just until they start to soften.
