Sweet potato chocolate donuts

Fluffy, with the natural sweetness of sweet potato and banana, and no flour.

Rico's note: On Sunday, when you've already cooked sweet potatoes for the week, set one aside for this — five minutes of work.

Ingredients

  • 250 g (9 oz) sweet potato
  • 2 eggs (100 g / 3½ oz)
  • 1 medium ripe banana (120 g / 4 oz)
  • 30 g (1 oz) reduced-fat cocoa powder
  • 5 g baking powder
  • 20 g (¾ oz) maple syrup or honey — no added sugar: 2 tbsp sugar-free maple-flavored syrup (20 g)

Method

  1. Cook the sweet potato in the microwave for 8–9 minutes or roast it in the oven at 200 °C (400 °F) for 35–40 minutes, until very soft. Let it cool and scoop out the flesh.
  2. In a bowl, mash the sweet potato and banana together well.
