Sweet potato and quinoa croquettes

A snack that's crispy outside and soft inside, no frying.

Rico's note: Make a batch on Sunday and you'll have snacks for several days — they keep well in the fridge.

Ingredients

  • 300 g (10½ oz) sweet potato, cooked and mashed
  • 100 g (3½ oz) cooked quinoa
  • 50 g (1¾ oz) oat flour
  • 1 egg (50 g / 1¾ oz)
  • 1 tsp turmeric (3 g)
  • 1 tsp paprika (2 g)
  • salt and pepper, to taste
  • Greek yogurt and fresh herbs — optional, to serve, not included in the macros

Method

  1. In a bowl, mix the mashed sweet potato with the quinoa, turmeric, paprika, salt and pepper.
  2. With damp hands, shape small, compact croquettes.
