Stuffed chicken pinwheels

Finely ground chicken, rolled up with cheese and cut into slices.

Rico's note: Always cut with a very sharp, wet knife — that way the slices come out clean and don't squash the roll.

Ingredients

  • 1 whole-wheat wrap (70 g / 2½ oz)
  • 150 g (5½ oz) chicken breast (or ground chicken)
  • salt, pepper, paprika, garlic powder and oregano, to taste
  • 2 slices reduced-fat cheese (40 g / 1½ oz)
  • egg and yogurt mayonnaise, to serve, recipe in this ebook (20 g / ¾ oz)

Method

  1. Season the chicken breast with salt, pepper, paprika, garlic powder and oregano.
  2. Blitz it in the blender into a thick paste (or use ground chicken).
