Strawberry basil sorbet

Classic strawberry with a surprising touch of fresh herbs.

Rico's note: Basil seems odd in this recipe, but give it a try — it adds a fresh note that strawberry alone doesn't have.

Ingredients

  • 350 g (12½ oz) strawberries, hulled — fresh or frozen
  • ½ lemon, juice only (15 g / ½ oz)
  • 8 fresh basil leaves (5 g)
  • 10 g sugar — adjust to taste; or the same amount of maple syrup; no added sugar: 15 g erythritol
  • water, as needed — only if you need it for the RE-SPIN

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Blend the strawberries, lemon juice, basil and sugar into a smooth purée, with no visible bits of leaf.
  2. Pour into the pint container without going past the MAX line.
