Ingredients
- 1 cup rice flour (150 g / 5½ oz)
- 1 cup sweet cassava starch, polvilho doce (120 g / 4 oz)
- ½ cup gluten-free oat flour (45 g / 1½ oz)
- 2 tbsp sugar (24 g / ¾ oz) — no added sugar: 3 tbsp erythritol (30 g)
- 2 tbsp psyllium husk (16 g / ½ oz)
- 1 tsp salt (6 g)
- 1 tbsp active dry yeast (10 g)
- 2 eggs (100 g / 3½ oz)
- 3 tbsp melted coconut oil (30 g / 1 oz)
- ¾ cup warm coconut milk (180 g / 6½ oz)
In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.
Method
- Activate the yeast in the warm coconut milk with a spoonful of the sugar and let it sit for 5 minutes.
- Mix the dry ingredients: the flours, cassava starch, the rest of the sugar, psyllium and salt.
