Sesame and flaxseed crackers

Crisp, high in fiber, and great with pâtés and cheeses.

Rico's note: Keep them in a glass jar to take to work — they last all week and take care of any craving for packaged crackers.

Ingredients

  • 1 cup almond flour (100 g / 3½ oz)
  • ½ cup golden flaxseed meal (55 g / 2 oz)
  • ¼ cup sesame seeds (36.3 g / 1¼ oz)
  • ¼ cup chia seeds (42.5 g / 1½ oz)
  • 1 tsp salt (6 g)
  • 1 tbsp psyllium husk, optional (10 g)
  • 1 egg (50 g / 1¾ oz) — vegan version: 3 tbsp olive oil + 3 tbsp water
  • ⅓ cup water (80 g / 2¾ oz)
  • coarse salt, as needed — for sprinkling

Method

  1. Preheat the oven to 170 °C (340 °F).
  2. In a bowl, mix the almond flour, flaxseed meal, sesame seeds, chia seeds, salt and psyllium (if using).
