Seasonal mushroom soup
Creamy, earthy and full of mushroom flavor.
Ingredients
- 400 g (14 oz) mixed mushrooms — cleaned and sliced
- 1 potato (150 g / 5½ oz) — diced
- 1 onion (150 g / 5½ oz)
- 3 cloves garlic (15 g / ½ oz)
- 1 liter (4¼ cups) water
- 2 tbsp olive oil (20 g / ¾ oz)
- fresh thyme, to taste (5 g)
- salt and pepper, to taste
Method
- Sauté the onion and garlic in the olive oil for 3 minutes.
- Add the cleaned, sliced mushrooms and sauté for 5 minutes, until they release their liquid.
