Rosemary sweet potato chips

A crispy snack with no frying, ready in under half an hour.

Rico's note: Swap bagged potato chips for these for good — they take a little more work, but there's no comparison.

Ingredients

  • 2 medium sweet potatoes (400 g / 14 oz) — 200 g each
  • 1½ tbsp extra-virgin olive oil (15 g / ½ oz)
  • 1 tsp fresh rosemary, chopped (1 g)
  • fleur de sel, to taste
  • ½ tsp ground black pepper (2 g)

Method

  1. Wash and dry the sweet potatoes well, without peeling them.
  2. Slice them into very thin rounds, 2–3 mm thick, with a mandoline or a very sharp knife.
