Quick passion fruit mousse

Light on the palate, tangy and ready after a few minutes with the mixer.

Rico's note: Serve this mousse in individual cups when you have people over for dinner and want something quick after the main course.

Ingredients

  • 1 cup coconut cream, solid part of a chilled can (240 g / 8½ oz)
  • ½ cup unsweetened concentrated passion fruit juice (120 g / 4 oz)
  • 2 tbsp powdered sugar (24 g / ¾ oz) — no added sugar: 4 tbsp powdered erythritol (32 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. With a mixer, whip the chilled coconut cream until fluffy, like whipped cream.
  2. Add the sugar and beat a little longer.
