Quick apricot jam
Just two ingredients and a short wait for a thick, sweet filling.
Ingredients
- 1 cup unsweetened dried apricots (130 g / 4½ oz)
- 1 cup hot water (240 g / 8½ oz)
- 2 tsp sugar, optional; apricots are already sweet (8 g) — no added sugar: 1 tbsp erythritol (optional; the apricot is already sweet) (13 g)
In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.
Method
- Put the dried apricots and hot water in a bowl.
- Let them rehydrate for 30 minutes.
The full method (5 steps), Rico's tip, the Thermomix® or similar version, the variations and storage are in the ebook “Breads, Cakes & Basics”. The English edition is coming soon.
