Purple sweet potato balls

Naturally lilac, with just three main ingredients.

Rico's note: The color of these always turns heads at the table. A great way to use up purple sweet potato purée left over from last night's dinner.

Ingredients

  • 245 g (8½ oz) purple sweet potato purée, well dried
  • 120 g (4 oz) cassava starch (polvilho doce)
  • 60 g (2 oz) sour cassava starch (polvilho azedo)
  • 3 tbsp olive oil (30 g / 1 oz)
  • 1 tsp salt (6 g)
  • warm water, if needed — to get the right consistency

Method

  1. Preheat the oven to 200 °C (400 °F).
  2. Mix the warm purée with the olive oil and salt.
