Ingredients

  • 1½ cups unsweetened shredded coconut (120 g / 4 oz)
  • ½ cup coconut milk, the creamy part (120 g / 4 oz)
  • 2 tbsp sugar (24 g / ¾ oz) — no added sugar: 3 tbsp erythritol (39 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. In a bowl, mix the shredded coconut, sugar and coconut milk.
  2. Stir well until it forms a moist, cohesive paste.
