Pita with hummus and roasted vegetables

Whole-wheat pita with creamy hummus and air fryer vegetables.

Ingredients

  • 2 whole-wheat pitas (120 g / 4 oz)
  • 200 g (7 oz) homemade or good-quality hummus
  • 1 red bell pepper, cut into strips (150 g / 5½ oz)
  • 1 small zucchini, sliced into rounds (150 g / 5½ oz)
  • 100 g (3½ oz) whole cherry tomatoes
  • 1 tbsp olive oil (10 g)
  • salt and black pepper, to taste
  • sweet paprika and chopped fresh parsley, to taste

Method

  1. Preheat the air fryer to 180 °C (350 °F).
  2. In a bowl, toss the bell pepper, zucchini and cherry tomatoes with the olive oil, salt and pepper.
