Pineapple chunk cake

Little pieces of pineapple hidden in a fluffy gluten-free cake.

Rico's note: A good one to bring to the office when you have pineapple left in the fridge — it disappears in no time.

Ingredients

  • 165 g (6 oz) chopped pineapple, well drained — if canned in syrup, use a no-sugar-added version
  • 112 g (4 oz) coconut flour
  • 96 g (3½ oz) almond flour
  • 105 g (3¾ oz) sugar — no added sugar: 150 g erythritol
  • 1 tbsp baking powder (14 g)
  • 4 eggs (200 g / 7 oz)
  • 120 ml (½ cup) coconut milk
  • 73 g (2½ oz) melted coconut oil
  • coconut oil, for greasing

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a round cake pan with coconut oil.
  2. In a bowl, mix the coconut flour, almond flour, sugar and baking powder.
