Oat and dark chocolate cookies

Crisp at the edges, soft in the center, made in the air fryer in 20 minutes.

Rico's note: Double the recipe — one batch is never enough for the whole week. Flatten the balls well before cooking; in the air fryer they don't spread on their own the way they do in the oven.

Ingredients

  • 120 g (4 oz) quick oats
  • 60 g (2 oz) whole-wheat flour
  • 50 g (1¾ oz) coconut sugar
  • 20 g (¾ oz) 70% dark chocolate, chopped
  • 1 large egg (50 g / 1¾ oz)
  • 60 ml (¼ cup) extra-virgin olive oil
  • 5 ml vanilla extract
  • 2 g baking powder
  • 1 pinch salt (1 g)

Method

  1. In a large bowl, mix the oats, flour, coconut sugar, baking powder and salt.
  2. In another bowl, beat the egg with the olive oil and vanilla.
