Microwave protein mini cheesecake

A single serving just for you, ready in 6 minutes, with a berry sauce.

Rico's note: When you want something sweet mid-afternoon and don't feel like raiding the whole pantry, make this in no time in the microwave.

Ingredients

  • 70 g (2½ oz) reduced-fat whipped fresh cheese — or plain Greek yogurt
  • 2 egg whites (60 g / 2 oz) — or 1 large egg
  • 40 g (1½ oz) cookie-flavored oat flour
  • 25 g (1 oz) vanilla protein powder
  • 1 square dark chocolate (5 g) — optional
  • 50 g (1¾ oz) frozen berries
  • sugar, to taste — optional; no added sugar: sweetener to taste
  • olive oil, for greasing

Method

  1. In a small bowl, mix the fresh cheese, egg whites, oat flour and protein powder into a creamy, lump-free batter.
  2. Grease a small dish or silicone mold with a little olive oil and pour in the batter.
