Light vegetable feijoada (bean stew)

Black beans stewed with bell pepper and cabbage, with a smoky touch only for those who want it.

Rico's note: A lighter take on feijoada, with no chouriço — the beans and vegetables make the dish.

Ingredients

  • 480 g (1 lb) cooked black beans, drained — about 2 cans
  • 1 onion (120 g / 4 oz)
  • 2 cloves garlic (6 g)
  • 1 red bell pepper (100 g / 3½ oz)
  • 200 g (7 oz) cabbage, cut into thin strips — Portuguese kale or savoy cabbage
  • 400 g (14 oz) diced tomatoes
  • 1 tsp sweet paprika (2 g)
  • 1 tsp cumin (2 g)
  • 2 tbsp olive oil (20 g / ¾ oz)
  • 300 ml (1¼ cups) water
  • bay leaf and salt, to taste

Method

  1. Heat the olive oil in a saucepan. Sauté the onion, garlic and bell pepper for 5 minutes.
  2. Add the tomatoes, sweet paprika, cumin and bay leaf. Let it simmer for 8 minutes.
