Lentil salad with mango and avocado

Cold lentils with sweet mango, creamy avocado and a citrus touch.

Rico's note: Adding fruit to a lentil salad may sound odd, but the mango cuts through the heaviness of the lentils and works surprisingly well.

Ingredients

  • 480 g (1 lb) cooked lentils, drained
  • 300 g (10½ oz) ripe mango, diced
  • 200 g (7 oz) avocado, diced
  • 150 g (5½ oz) red bell pepper, finely diced
  • 1 small finely chopped red onion (60 g / 2 oz)
  • 20 g (¾ oz) fresh cilantro, chopped
  • 3 tbsp olive oil (30 g / 1 oz)
  • 2 tbsp lemon juice (30 g / 1 oz)
  • salt and black pepper, to taste

Method

  1. In a large bowl, combine the lentils, bell pepper and red onion.
  2. Dress with the olive oil, lemon juice, salt and pepper, and mix well.
