Lemon mini cake

Fresh and tangy, with a creamy topping and lemon zest.

Rico's note: Be generous with the lemon zest — it's what makes this little cake taste sweeter than it really is.

Ingredients

  • 1 medium banana (100 g / 3½ oz)
  • 4 tbsp oats (40 g / 1½ oz)
  • 1 egg (50 g / 1¾ oz)
  • 60 g (2 oz) low-fat Greek yogurt
  • ½ lemon, juice only (15 g / ½ oz)
  • grated lemon zest, to taste
  • cinnamon, to taste — optional
  • sugar, to taste — optional; no added sugar: sweetener to taste
  • 30 g (1 oz) low-fat Greek yogurt — for the topping
  • 15 g (½ oz) lemon or vanilla protein powder — for the topping
  • olive oil, for greasing

Method

  1. In the blender, blend the banana, oats, egg, yogurt, lemon juice and zest, cinnamon and sugar into a smooth batter.
  2. Grease a mini silicone pan with a drizzle of olive oil and pour in the batter.
