Italian bread with nutritional yeast 'parmesan'

Garlic and herb aroma, with a lactose-free cheesy touch.

Rico's note: Nutritional yeast fools your taste buds; anyone who doesn't know will swear there's real cheese in the bread.

Ingredients

  • 180 g (6½ oz) rice flour
  • 120 g (4 oz) sweet cassava starch (polvilho doce)
  • 60 g (2 oz) gluten-free oat flour
  • 18 g (¾ oz) psyllium powder
  • 1 tsp salt (6 g)
  • 1 tbsp active dry yeast (14 g)
  • 1 tbsp sugar (12 g) — to activate the yeast; no added sugar: 1 tbsp erythritol (17 g)
  • 240 ml (1 cup) warm water
  • 2 eggs (100 g / 3½ oz)
  • 3 tbsp olive oil (30 g / 1 oz)
  • 1 tbsp dried fines herbes (oregano, thyme, marjoram) (3 g)
  • 4 tbsp nutritional yeast (20 g / ¾ oz) — gives it a Parmesan flavor
  • 1 tsp garlic powder (3 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Dissolve the sugar in the warm water and add the yeast; let it sit for 10 minutes, until foamy.
  2. In a bowl, mix the flours, sweet cassava starch (polvilho doce), psyllium, salt, nutritional yeast, fines herbes and garlic powder.
