Grilled black scabbardfish with banana and passion fruit

The Madeiran classic, with nothing complicated about it.

Rico's note: A great way to use up a very ripe banana — it works so well you'll end up making it on purpose.

Ingredients

  • 2 black scabbardfish fillets (400 g / 14 oz)
  • 1 ripe banana (120 g / 4 oz)
  • 2 passion fruit, pulp (80 g / 2¾ oz)
  • 2 cloves garlic, minced (6 g)
  • fresh parsley, to taste
  • 1 tbsp olive oil (10 g)
  • 1 lemon (30 g / 1 oz)
  • salt, to taste

Method

  1. Pat the black scabbardfish fillets dry with a paper towel and season with salt, garlic and lemon juice.
  2. Cut the banana in half lengthwise.
