Green spinach rolls

Naturally green, with no grain flours, ready in 40 minutes.

Rico's note: The spinach hides in these rolls and nobody notices — apart from the color. Great in a packed lunch, already filled with sliced turkey.

Ingredients

  • 150 g (5½ oz) cooked spinach, drained and chopped — squeezed well
  • 144 g (5 oz) almond flour
  • 56 g (2 oz) coconut flour
  • 24 g (¾ oz) psyllium powder
  • 1 tbsp baking powder (12 g)
  • 1 tsp salt (6 g)
  • 3 eggs (150 g / 5½ oz)
  • 73 g (2½ oz) olive oil
  • 120 ml (½ cup) warm water

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a baking sheet or a muffin pan.
  2. Mix the dry ingredients: flours, psyllium, baking powder and salt.
