Green banana brigadeiro (Brazilian fudge truffle)

Ingredients

  • 1 cup green banana biomass (green banana purée), warm (240 g / 8½ oz)
  • ½ cup coconut milk (120 g / 4 oz)
  • 3 tbsp cocoa powder (18 g / ¾ oz)
  • 2 tbsp white or brown sugar (24 g / ¾ oz) — no added sugar: 3 tbsp erythritol (39 g)
  • 1 tbsp coconut oil (14 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. In a blender, blend the warm biomass with the coconut milk until smooth.
  2. Transfer to a saucepan and add the cocoa, sugar and coconut oil.
