Quantities and times are a starting point: adjust them to your taste. Two things don't change: poultry and ground meat must be cooked all the way through, and allergens — always check the labels.

Glossy chocolate sauce

Mirror-shiny, and it thickens in a few minutes on the stove.

Rico's note: Make a small bowl of this sauce when you want to dress up a simple cake without starting from scratch.

Ingredients

  • ½ cup cocoa powder (45 g / 1½ oz)
  • ⅓ cup white or brown sugar (65 g / 2¼ oz) — no added sugar: ½ cup erythritol (100 g)
  • ½ cup water (120 g / 4 oz)
  • 1 tsp coconut oil (5 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. In a saucepan, mix the cocoa, sugar and water.
  2. Place over medium heat, about 170 °C (340 °F), stirring constantly.
