Eggplant mini pizzas

Roasted eggplant with tomato sauce, like a mini pizza.

Rico's note: Perfect for a Friday night when you're craving something pizza-like without going overboard on carbs.

Ingredients

  • 1 large eggplant, cut into thick rounds (350 g / 12½ oz)
  • 4 tbsp homemade tomato sauce (60 g / 2 oz)
  • oregano and basil, to taste
  • 1 tbsp olive oil (10 g)

Method

  1. Cut the eggplant into rounds about 1.5 cm (½ in) thick.
  2. Brush both sides with olive oil and bake at 180 °C (350 °F) for 10 minutes.
