Egg and yogurt mayonnaise

Ingredients

  • 2 hard-boiled eggs (100 g / 3½ oz)
  • 70 g (2½ oz) low-fat Greek yogurt or cottage cheese
  • salt, pepper and garlic powder, to taste
  • ½ lemon (15 g / ½ oz) — juice only
  • 1 tbsp white vinegar (15 g / ½ oz)
  • ½ clove garlic, minced (1.5 g) — optional
  • 1 tsp Dijon mustard — optional

Method

  1. Put the hard-boiled eggs, yogurt, lemon juice and vinegar in a blender or food processor.
  2. Season with salt, pepper and garlic powder, and add the minced garlic and mustard, if using.
