Ingredients

  • 1 cup rice flour (150 g / 5½ oz)
  • ½ cup almond flour (50 g / 1¾ oz)
  • ½ cup sweet cassava starch, polvilho doce (60 g / 2 oz)
  • 1 tsp salt (6 g)
  • 1 tsp oregano, or sesame seeds (2 g)
  • 1 tsp xanthan gum (2 g)
  • 1 egg (50 g / 1¾ oz)
  • 3 tbsp olive oil (30 g / 1 oz)
  • 3–4 tbsp cold water (45 g / 1½ oz)

Method

  1. Preheat the oven to 180 °C (350 °F) and line a baking sheet with parchment paper.
  2. Mix the dry ingredients: the flours, cassava starch, salt, oregano and xanthan gum.
