Crispy garlic lemon edamame

A quick, protein-rich snack, ready in 17 minutes in the air fryer.

Rico's note: Keep a bag of edamame in the freezer for the days when you want a proper snack.

Ingredients

  • 300 g (10½ oz) shelled edamame (frozen is fine)
  • 15 ml (1 tbsp) extra-virgin olive oil
  • 2 cloves garlic, minced (6 g)
  • ½ lemon, juice only (15 g / ½ oz)
  • ½ lemon, zest only (2 g)
  • fleur de sel, to taste
  • freshly ground black pepper, to taste

Method

  1. Thaw the edamame if frozen and pat it dry with paper towels.
  2. In a bowl, toss the edamame with the olive oil, minced garlic, lemon juice, fleur de sel and pepper until evenly coated.
