Creamy cashew frosting

The plant-based alternative to cream cheese frosting, ideal for carrot cake.

Rico's note: Soak the cashews in the morning and by evening this is ready to frost the cake for your afternoon snack.

Ingredients

  • 1 cup raw cashews, soaked in hot water for 1 hour (130 g / 4½ oz)
  • 1½ tbsp powdered sugar (18 g / ¾ oz) — no added sugar: 3 tbsp powdered erythritol (24 g)
  • 2 tbsp lemon juice (30 g / 1 oz)
  • 1 tsp vanilla extract (4 g)
  • 3–4 tbsp water, or coconut milk (52 g / 1¾ oz)
  • 1 tbsp coconut oil (14 g) — to set

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Drain the soaked cashews well.
  2. In a blender, blend the cashews with the sugar, lemon juice, vanilla and 3 tbsp of water.
