Cottage cheese cheesecake with mixed berries

A single-serve cheesecake made in the air fryer, with a berry sauce.

Rico's note: For nights when you want a proper dessert but it's too late for anything elaborate.

Ingredients

  • ½ ripe banana (59 g / 2 oz)
  • 60 g (2 oz) cottage cheese
  • 3 tbsp cookie-flavored oats (30 g / 1 oz) — or oat flour
  • 1 egg (50 g / 1¾ oz)
  • salt, to taste
  • cinnamon, to taste — optional
  • 2 tbsp lemon juice (30 g / 1 oz) — optional
  • 50 g (1¾ oz) frozen berries — for the sauce
  • 25 g (1 oz) vanilla protein powder — for the cream, or vanilla/lemon protein yogurt
  • olive oil, for greasing
  • water or milk, as needed — for the cream

Method

  1. Blend the banana, cottage cheese, oats, egg, salt, cinnamon and lemon juice (if using) until creamy.
  2. Grease a mini silicone mold with a drizzle of olive oil and pour in the batter.
