Coconut whipped cream

Ingredients
- 1 can (400 ml) full-fat coconut milk, chilled at least 12 hours (220 g / 8 oz) — use only the solid part that forms at the top of the can
- 1 tbsp powdered sugar (12 g) — no added sugar: 2 tbsp powdered erythritol (for decorating) (16 g)
- 1 tsp vanilla extract (4 g)
In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.
Method
- Don't shake the can. Open it carefully and spoon out only the solid, creamy layer that has formed on top.
- Set aside the liquid at the bottom (save it for smoothies).
