Coconut oil buttercream
Light, fluffy and dairy-free — it keeps well in the fridge.
Ingredients
- 1 cup solid coconut oil, not chilled (220 g / 8 oz)
- ⅔ cup powdered sugar (80 g / 2¾ oz) — no added sugar: 1 cup powdered erythritol (120 g)
- 1 tsp vanilla extract (4 g)
- 1 pinch salt (0.5 g)
In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.
Method
- Sift the powdered sugar.
- With a mixer, beat the solid coconut oil for 2–3 minutes, until fluffy.
