Coconut lemon cookies

Just three ingredients, and the oven does the rest in 15 minutes.

Rico's note: Bake a batch on Sunday and keep them in your snack box all week; they taste of toasted coconut and never get tiresome.

Ingredients

  • 90 g (3¼ oz) unsweetened shredded coconut
  • 2 eggs (100 g / 3½ oz)
  • 1 lemon, zest only (5 g)
  • 3 pitted dates, finely chopped (36 g / 1¼ oz) — to sweeten; optional
  • salt, to taste

Method

  1. Turn the oven on to 160 °C (325 °F) and line a baking sheet with parchment paper.
  2. In a bowl, beat the eggs and add the shredded coconut, lemon zest, chopped dates and a pinch of salt.
