Classic marble cake

The interplay of vanilla and chocolate, without wheat flour.

Ingredients

  • 1 cup rice flour (158 g / 5½ oz)
  • 1 cup almond flour (100 g / 3½ oz)
  • ⅔ cup white or brown sugar (135 g / 5 oz) — no added sugar: 1 cup erythritol (180 g)
  • 1 tbsp baking powder (12 g)
  • 4 eggs (200 g / 7 oz)
  • ½ cup coconut oil (100 g / 3½ oz)
  • ½ cup almond milk (120 g / 4 oz)
  • 1 tsp vanilla extract (4 g)
  • 2 tbsp 100% cocoa powder (15 g / ½ oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a tube pan.
  2. Combine the dry ingredients: rice flour, almond flour, sugar and baking powder.
