Ingredients

  • 1½ cups almond flour (150 g / 5½ oz)
  • ½ cup gluten-free oat flour (45 g / 1½ oz)
  • ⅓ cup white or brown sugar (65 g / 2¼ oz) — no added sugar: ½ cup erythritol (95 g)
  • 1 tsp baking powder (4 g)
  • ½ tsp salt (3 g)
  • 1 egg (50 g / 1¾ oz)
  • ⅓ cup melted coconut oil (70 g / 2½ oz)
  • 1 tsp vanilla extract (4 g)
  • ½ cup 100% cacao chocolate chips (85 g / 3 oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and line a baking sheet with parchment paper.
  2. In a bowl, mix the almond flour, oat flour, sugar, baking powder and salt.
