Chicken stir-fry with almonds and broccoli

A quick chicken stir-fry with crisp broccoli and toasted almonds.

Rico's note: Make this on a training day when you want just one dirty pan: the chicken cooks in five minutes and the toasted almonds take it up a notch.

Ingredients

  • 250 g (9 oz) chicken breast, cut into thin strips
  • 1 large head of broccoli, cut into florets (300 g / 10½ oz)
  • 60 g (2 oz) sliced almonds
  • 2 cloves garlic, minced (6 g)
  • 1 piece (3 cm / 1¼ in) fresh ginger, grated (8 g)
  • 15 g (½ oz) gluten-free soy sauce
  • 1 tbsp sesame seeds (10 g)
  • 1 tbsp olive oil (10 g)
  • salt, to taste

Method

  1. Cut the chicken breast into thin strips and season with a pinch of salt.
  2. Break the broccoli into small florets so it cooks evenly.
