Chicken dumplings

A chicken and vegetable filling wrapped in rice paper and browned in a skillet.

Rico's note: There's always filling left over — keep it and use it the next day to fill a tortilla or make a quick salad.

Ingredients

  • 5 rice paper sheets (40 g / 1½ oz)
  • olive oil, as needed
  • 150 g (5½ oz) chicken, shredded or chopped
  • 1 tbsp soy sauce (15 g / ½ oz)
  • ½ red onion (50 g / 1¾ oz)
  • 1 chopped tomato (100 g / 3½ oz)
  • salt, pepper, paprika and garlic powder, to taste
  • chives or parsley, to taste
  • carrot, mushrooms, spinach, bell pepper or zucchini (optional) — extra for the filling

Method

  1. Heat a drizzle of olive oil in a skillet and sauté the onion until soft.
  2. Add the chicken, tomato, soy sauce and seasonings. Add the extra vegetables too, if you like.
