Chicken and red cabbage rolls

Crispy rolls with no frying, served with an avocado lime sauce.

Rico's note: Great for using up chicken you've already cooked during the week — 15 minutes in the air fryer and you have a decent appetizer.

Ingredients

  • 8 rice paper sheets (64 g / 2¼ oz)
  • 200 g (7 oz) cooked shredded chicken
  • 100 g (3½ oz) red cabbage, shredded
  • 1 grated carrot (60 g / 2 oz)
  • 1 tsp fresh ginger, grated (2 g)
  • 1 tbsp soy sauce (15 g / ½ oz)
  • 1 ripe avocado, for the sauce (150 g / 5½ oz)
  • 1 lime (juice only, for the sauce) (30 g / 1 oz)
  • olive oil, as needed — for brushing the rolls

Method

  1. Soften the rice paper sheets one at a time in warm water until pliable.
  2. In a bowl, mix the shredded chicken with the red cabbage, carrot, ginger and soy sauce.
