Cheese-flavored cornmeal cake

The classic cornmeal cake texture, with a savory touch of nutritional yeast.

Rico's note: A lighter take on the classic cornmeal cake — and it still tastes like childhood.

Ingredients

  • 1½ cups fine cornmeal (240 g / 8½ oz)
  • 1 cup almond flour (96 g / 3½ oz)
  • ⅓ cup sugar (65 g / 2¼ oz) — no added sugar: ½ cup erythritol (95 g)
  • 4 tbsp nutritional yeast, cheesy flavor (32 g / 1¼ oz)
  • 1 tbsp baking powder (12 g)
  • 1 tsp salt (6 g)
  • 1 tsp aniseed, or fennel seeds (1 g) — optional
  • 3 eggs (150 g / 5½ oz)
  • ½ cup olive oil (108 g / 3¾ oz)
  • 1 cup unsweetened almond milk (240 g / 8½ oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a tube pan well.
  2. In a large bowl, mix the cornmeal, almond flour, sugar, nutritional yeast, baking powder, salt and aniseed.
