Carrot and chicken croquettes

Rico's note: The trick is to seal the ball well before breading — if there's a gap, all the cheese escapes in the air fryer.

Ingredients

  • 400 g (14 oz) ground chicken
  • 2 carrots, grated (200 g / 7 oz)
  • salt, pepper, paprika and garlic powder, to taste
  • 8 reduced-fat mozzarella balls (120 g / 4 oz)
  • sugar-free corn flakes or panko, for breading, as needed

Method

  1. Grate the carrots. If you don't have panko, crush the corn flakes until they have a texture like breadcrumbs.
  2. In a bowl, mix the ground chicken with the grated carrot. Season with salt, pepper, paprika and garlic powder and mix until evenly combined.
