Carrot and cheese tortillas

Thin, golden tortillas — a different way to eat carrots.

Rico's note: A great way to use up carrots that are about to turn — nobody notices the vegetable hidden in all that cheese.

Ingredients

  • 1 medium grated carrot (100 g / 3½ oz)
  • 1 egg (50 g / 1¾ oz)
  • 30 g (1 oz) shredded reduced-fat cheese
  • salt, pepper and garlic powder, to taste
  • olive oil, for greasing

Method

  1. Grate the carrot very finely and squeeze it in a clean kitchen towel to remove as much water as possible.
  2. In a bowl, combine the grated carrot, egg, shredded cheese and seasonings, and mix well.
