Boiled snails with garlic and cilantro

Ingredients

  • 1 kg (2¼ lb) fresh snails — well washed
  • 4 cloves garlic, crushed (12 g)
  • 1 bunch of fresh cilantro (15 g / ½ oz)
  • 1 tsp dried oregano (1 g)
  • 1 bay leaf (1 g)
  • salt and freshly ground black pepper, to taste
  • piri-piri, to taste — optional

Method

  1. Wash the snails several times in cold water until the water runs clear.
  2. In a large pot, cover the snails with cold water.
