Boiled potato slices with herbs and olive oil

Rico's note: Boil a batch of potatoes on Sunday, then just slice and season them whenever you want a savory snack.

Ingredients

  • 2 medium potatoes (300 g / 10½ oz) — skin on
  • 1 tbsp chopped fresh herbs (rosemary, thyme or oregano) (3 g)
  • 1 tbsp extra-virgin olive oil (10 g)
  • fleur de sel and freshly ground black pepper, to taste
  • water, as needed — for cooking

Method

  1. Wash the potatoes well and boil them in their skins until tender but still firm, about 20–25 minutes.
  2. Let them cool a little before slicing.
