Bean rice (arroz de feijão)

Loose, saucy rice with red kidney beans, tomato and sweet paprika, all in one pot.

Rico's note: A pantry dish: canned beans, rice and whatever's in the fridge. It always works.

Ingredients

  • 400 g (14 oz) cooked red kidney beans, drained — about 2 cans
  • 250 g (9 oz) carolino rice (or other medium-grain rice), uncooked
  • 1 onion (120 g / 4 oz)
  • 2 cloves garlic (6 g)
  • 400 g (14 oz) diced tomatoes
  • 1 tsp sweet paprika (2 g)
  • 1 bay leaf (1 g)
  • 2 tbsp olive oil (20 g / ¾ oz)
  • 700 ml (3 cups) water
  • salt and pepper, to taste

Method

  1. Heat the olive oil in a saucepan. Sauté the chopped onion and garlic for 4 minutes.
  2. Add the tomatoes, sweet paprika and bay leaf. Let it cook down for 8 minutes, stirring now and then.
